Lievito Fresco is a personal food blog written by a home cook, not by a nutritionist, dietitian, or food-safety professional. Everything here is shared in good faith and tested in a domestic kitchen — please read the notes below before you cook.
Recipe Results
Every recipe on this Site has been made and eaten in our own kitchen before publication. Even so, results vary — and often for reasons no recipe can control:
- Ovens differ. Stated temperatures and times are a starting point. An oven thermometer is the single most useful tool for matching our results.
- Ingredients differ. Flour protein content, yeast freshness, egg size, butter fat content, and the water in your area all change how a dough or batter behaves.
- Kitchens differ. Room temperature, humidity, and altitude meaningfully affect proving, baking, and frying.
- Substitutions change things. We suggest swaps where we have tested them; an untested substitution may not behave the same way.
Use the visual and textural cues in the method — "golden and nutty", "doubled in size", "until it springs back" — over the clock. They travel between kitchens far better than timings do.
Allergies and Dietary Needs
Dietary labels on this Site (vegetarian, vegan, gluten-free, dairy-free and similar) describe the recipe as written. They are a guide, not a certification.
If you cook for someone with a food allergy or intolerance, always check the packaging of every ingredient you use. Manufacturers reformulate products, and many otherwise-suitable items are produced on shared equipment and carry cross-contamination warnings. Only the label in your hand is authoritative.
If you have a serious allergy, coeliac disease, or another medical dietary requirement, please treat our labels as a starting point for your own checks and speak to a qualified professional about your diet.
Nutrition Information
Where nutrition figures appear, they are estimates calculated from standard ingredient databases — not results from laboratory analysis of the finished dish.
They will not match your plate exactly. Brand choice, ingredient substitutions, how generously you measure, actual portion size, and how much of a marinade, frying oil, or cooking liquid is genuinely consumed all move the numbers. Treat them as a rough guide only.
If you are counting nutrients for a medical reason — managing diabetes, kidney disease, an eating disorder, or any condition where intake matters clinically — please calculate from your own ingredients and follow the advice of your doctor or dietitian rather than these figures.
