This Overnight Oats Chia Seed Pudding became a staple in our kitchen during the months leading up to IVF. As I focused on incorporating more nourishing, anti-inflammatory foods into my diet, I found myself searching for breakfasts that were both nutritious and realistic for everyday life. Unsurprisingly, many of the ingredients recommended by our IVF specialist, including chia seeds, rolled oats, Greek yogurt, and fresh berries, are the very same ingredients that make up this simple breakfast.
I've actually been adding chia seeds to my meals for more than 10 years, but it wasn't until I travelled through Peru a few years ago that I truly came to appreciate their history. Seeing how deeply rooted they are in the region's food culture gave me a whole new appreciation for this tiny seed, and it's one I've continued to keep stocked in my pantry ever since.
The truth is, I've never been a big breakfast person. Mornings are often busy, and when you're juggling appointments, work, and everything else life throws your way, preparing a complicated meal is usually the last thing on your mind. A good rule to remember is 1 tablespoon (12 g) of chia seeds for every ¼ cup (60 ml) of liquid. In this recipe, the combination of soy milk and Greek yogurt provides more than enough moisture for the chia seeds to bloom properly, giving you a creamy consistency without becoming overly thick.
One final tip that makes all the difference is to stir the mixture well after everything has been combined, then give it another quick stir about 10 minutes later. This helps separate the seeds before they begin to gel, preventing clumps and ensuring every spoonful is perfectly smooth.

- 1 tbsp Chia Seeds
- 1 tbsp Organic Rolled Oats
- 1/2 cup Soy Milk (or milk of choice)
- 1/3 cup Greek yogurt (or yogurt of choice)
- 1 tsp Maple syrup
- a handful Fresh berries (for serving)
Directions
- Combine the Ingredients Add the chia seeds, rolled oats, soy milk, Greek yogurt, and maple syrup to a small jar, glass, or goblet. Stir well until fully combined.
- Mix Well Stir thoroughly until the mixture is smooth and uniform, ensuring the chia seeds are evenly dispersed.
- Chill Cover and refrigerate for at least 4 hours, or preferably overnight, until the mixture has thickened and the oats have softened.
- Stir Before Serving Give the pudding a gentle stir to loosen the texture before serving.
- Add Toppings Top with fresh berries and any additional toppings of your choice before serving.
