Breakfast · Bread · Gifts from the Kitchen · Vegetarian · Nut-Free · Time: 1 hr 30 min · Servings: 10 · Difficulty: Easy
Moist, rich, and deeply chocolatey, this dark chocolate zucchini bread is an easy homemade loaf packed with fresh zucchini, cocoa powder, and chunks of dark chocolate.
If you are looking for a moist chocolate zucchini bread that tastes more like a rich chocolate cake than a vegetable loaf, this recipe is for you. Fresh grated zucchini adds incredible moisture and creates a soft, tender crumb, while unsweetened cocoa powder and dark chocolate give the loaf a deep and indulgent chocolate flavour. The best part? You won't taste the zucchini. It simply works quietly in the background, keeping this chocolate zucchini bread wonderfully moist and tender.
I first discovered chocolate zucchini bread in Cologne at an airport, of all places. As part of my little travel ritual, I always treat myself to a coffee and something sweet once I've checked in and cleared immigration. That day, something unusual caught my eye in the display case. Among the pain au chocolat and buttery croissants was a loaf-shaped cake labelled Zucchini Chocolate Bread. It looked more like a rich chocolate loaf cake than traditional bread, with a dark top and melted chocolate rippling across the surface.
So, of course, I ordered a slice.
One bite and I was completely taken aback. It was incredibly moist and chocolatey, almost like a lighter and fluffier cousin of a brownie. The flavour was deep without being overly sweet, and the texture was soft, tender, and perfect alongside my coffee.
This recipe is my homage to that unexpected airport discovery. It is rich, cosy, deeply chocolatey, and a delicious way to use fresh zucchini.

What Is Chocolate Zucchini Bread?
Chocolate zucchini bread is a moist chocolate quick bread made with grated zucchini, cocoa powder, flour, eggs, and chocolate. Despite the name, it tastes much more like a tender chocolate loaf cake than a traditional savoury bread.
The zucchini has a very mild flavour and blends beautifully into the batter as the loaf bakes. Its main job is to add moisture, helping create the soft and tender texture that makes this moist chocolate zucchini bread so delicious.
This version combines unsweetened cocoa powder with chunks of dark chocolate for a deep chocolate flavour that is rich without being overly sweet.

How to Prepare Zucchini for Chocolate Zucchini Bread
There is no need to peel the zucchini before making this chocolate zucchini bread. Simply wash it, trim the ends, and grate it using a box grater or food processor.
Because zucchini naturally contains a lot of water, it is important to remove some of the excess moisture before adding it to the batter. Gently squeeze the grated zucchini by hand or allow it to drain in a colander.
However, don't squeeze it completely dry.
Leaving some moisture behind is one of the secrets to making a soft and moist chocolate zucchini bread. The goal is simply to remove excess liquid while keeping enough natural moisture to create a tender crumb.
Tips for Making Moist Chocolate Zucchini Bread
- Gently drain the zucchini: Remove excess water, but don't squeeze it completely dry.
- Don't overmix the batter: Mix only until the ingredients are combined to keep the loaf soft and tender.
- Use good-quality chocolate: Dark chocolate is one of the main flavours, so using good-quality chocolate makes a difference.
- Check for moist crumbs: A skewer should come out with a few moist crumbs rather than wet batter.
- Watch out for melted chocolate: The skewer may pass through melted chocolate chunks, which can make it look like the loaf is underbaked.
- Cover with foil if needed: Loosely cover the loaf if the top begins browning too quickly.
- Allow the loaf to cool: Letting the bread cool helps the crumb set and makes slicing easier.
Can You Taste the Zucchini in Chocolate Zucchini Bread?
No, the zucchini does not give this chocolate zucchini bread a noticeable vegetable flavour. Instead, the zucchini works in the background, adding moisture and helping create a soft, tender texture. The dominant flavours come from the cocoa powder and dark chocolate. This makes it a great recipe for anyone who is curious about baking with zucchini but doesn't want their chocolate cake or loaf to taste like vegetables.

How to Store Chocolate Zucchini Bread
Allow the chocolate zucchini bread to cool completely before storing it. Wrap the loaf tightly or place it in an airtight container to help prevent it from drying out. For the best texture and flavour, bring refrigerated slices back to room temperature before serving. You can also gently warm individual slices if you enjoy the chocolate slightly melted. If you live somewhere warm or humid, such as Singapore, refrigeration can be helpful for keeping the loaf fresh for longer.
Frequently Asked Questions
- Do I need to peel zucchini for chocolate zucchini bread?
No. Zucchini does not need to be peeled before making chocolate zucchini bread. The skin is tender and blends into the batter as the bread bakes. -
Should I squeeze the zucchini before making zucchini bread?
For this recipe, gently squeeze out some of the excess moisture, but do not squeeze the zucchini completely dry. Some of the natural moisture helps create a soft and tender loaf. -
Why is my chocolate zucchini bread wet in the middle?
The most common reasons are excess moisture, an underbaked centre, or variations in oven temperature. Make sure the zucchini is gently drained as directed and bake until a skewer inserted into the centre comes out with moist crumbs rather than wet batter. If the skewer passes through a piece of melted chocolate, that is perfectly fine. -
Can I use chocolate chips instead of chopped dark chocolate?
Yes. Chocolate chips can be used in place of chopped dark chocolate. Dark chocolate chips will give the closest flavour to the original recipe, while milk chocolate chips will make the loaf sweeter. -
How do I know when chocolate zucchini bread is done?
Insert a skewer into the centre of the loaf. It should come out with a few moist crumbs attached, but there should not be wet batter. Keep in mind that melted chocolate can leave streaks on the skewer. -
Can I freeze chocolate zucchini bread?
Yes. Once completely cooled, wrap the loaf tightly and freeze it in a freezer-safe container or bag. You can freeze the whole loaf or individual slices for easier serving. -
Can I make chocolate zucchini bread ahead of time?
Yes. Chocolate zucchini bread is a great make-ahead bake. Once cooled, store it properly and bring it to room temperature before serving. It is perfect for preparing ahead for breakfast, afternoon coffee, or a casual gathering.
Ingredients
- 390 g Grated Zucchini (from 1 or 2 small zucchinis, gently squeezed to remove extra water Tip: Don’t press the zucchini completely dry, just enough to get rid of excess moisture. A little bit of water helps keep the loaf soft and moist)
- 260 g All purpose flour
- 40 g Unsweetened Cocoa Powder
- 5 g Baking Soda
- 3 g Salt
- 10 g Vanilla extract
- 150 g Caster Sugar
- 2 whole Eggs
- 100 g Unsalted Butter (melted)
- 200 g Dark Chocolate
- 50 g Milk Chocolate (optional topping for extra richness)
Directions
- Preheat the Oven Preheat to 180°C (350°F) top and bottom heat or 160°C (fan-forced)
- Prepare the Pan Grease a large loaf tin (approx. 28 x 15 x 6.5 cm or 11 x 6 x 2.5 inches) with room temperature butter or line it with baking paper
- Sift the Dry Ingredients In a large bowl, sift together the flour, cocoa powder, baking soda, and salt.
- Chop the Chocolate If using a dark chocolate bar, chop it into small chunks. Set aside. (Reserve a few chunks for the topping if you like!)
- Grate and Drain the Zucchini Grate the zucchini using a box grater or food processor. Place it in a colander and gently squeeze out some of the liquid by hand—just enough to remove the excess, but not completely dry. Let it sit while you prepare the rest of the ingredients. A little moisture should remain, as it helps keep the chocolate zucchini bread soft and moist.
- Mix the Wet Ingredients In another large bowl, whisk the eggs and sugar until slightly pale. Add the melted butter and vanilla essence, and whisk until fully combined.
- Combine Wet and Dry Mixtures Pour the wet mixture into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. The batter will be thick.
- Add Zucchini and Chocolate Fold in the drained zucchini and chopped dark chocolate. The moisture from the zucchini will loosen the batter into a thick, spreadable consistency.
- Fill the Pan Spoon the batter into the prepared tin and smooth the top with a taper spatula. Sprinkle over reserved dark chocolate chunks or milk chocolate chips, if using.
- Bake Bake uncovered for 40 minutes. Then loosely cover with foil and bake for another 15 minutes, or until a skewer inserted into the center comes out mostly clean (melted chocolate streaks are perfectly fine!)
- Cool and Serve Let the loaf cool in the tin for 15 minutes. Transfer to a wire rack and let it cool slightly before slicing. Enjoy warm or at room temperature.
